– Grigory Vladimirovich, how do you manage to maintain quality standards for your bread products and retain customer trust in a competitive environment?
– Our enterprise has been around for more than 80 years. We are proud that in 1998, second only to Minsk, we introduced zavarnye podovy breads into production, and these breads have become popular among customers. To stay afloat, you must constantly refine product recipes, improve production technologies, refresh the assortment, maintain a modern laboratory, and know how to present your products. Our team strives to meet these tasks and keep pace with the times.
Bread products are supplied to retail outlets in the city and district not only from our factory but also from enterprises in other regions. When deliveries of bread are delayed due to bad weather or other reasons, the Zhlyobin bread factory quickly supports local stores and provides residents with fresh, high‑quality baked goods. This proves that cooperating with those who are nearby is far more reliable.
Recently the enterprise has noticeably increased its volumes. For example, over two years the daily production of “Volotovskoy Domashniy” bread grew from 850 to 1,900 kilograms. Today our assortment includes about 60 types of baked goods, of which more than 20 are breads. We are also actively developing the confectionery line: we constantly produce around 80 product varieties, including 15 types of cakes, 10 types of pastries, rolls, cookies, and various sweets. Soon new items will appear for sale – two types of pastries and a sponge roll.
Bread production is a complex process, but we are 100 % confident in the quality of our product. By the way, during blind tastings in the “Sosedi” and “Contain” retail chains, customers preferred our bread. This indicates that it is tasty. Currently, the plant’s technologists are working on improving the flavor of loaves and developing a recipe for a new loaf, “Zhlyobin Smak.” We understand that making it tasty is not enough; it also needs to be presented beautifully. Therefore we are developing attractive packaging so that customers recognize our products on store shelves.
– Everyone who has tried Zhlyobin cakes and pastries praises them, but it can sometimes be difficult to find them in the city’s stores. Why?
Indeed, our cupcakes and pastries “Fortuna” and “Karagod” are in high demand. They are tasty and natural. The only nuance is that they have a short shelf life. We do not use chemical additives that allow the product to be stored for a long time. Therefore these confectionery items are supplied to the city’s retail outlets in small quantities and are quickly sold out there. They can be purchased in small shops or in branded retail points. Unfortunately, large retail chains sell culinary products intended for their own workshops in their stores.
It is known that some bread manufacturers use various technologies to keep the product from staling for longer. How do you preserve the freshness of your bread?
To extend shelf life, some indeed use special methods: preservation with ethyl alcohol, sterilization, a modified gas environment, or shock freezing. Products after such treatment can be stored for months. The Zhlyobin Bread Factory does not apply any of these technologies. We bake bread according to traditional recipes using special starters – it is these that allow the product to remain fresh naturally for longer. Strict standards are maintained with modern equipment capable of controlling the temperature regime to the degree. We deliver products daily to city and district stores, so the choice is up to the buyer: purchase long‑shelf‑life bread or choose fresh, natural product without artificial additives and preservatives.
I don't have the opportunity to go to the store every day. Tell me how to properly store bread at home?
Although polyethylene bags have ventilation holes, it is better to remove the bread from the packaging immediately after purchase. The best storage methods are wooden or metal bread baskets. Bread can also be stored in the refrigerator. That way it stays fresh
